The dwarf pine
The forests of the Dolomites are characterized by a distinct atmosphere, with fresh air, moist ground, and changing light as the sun filters through the trees.
Among the taller trees, you can find a plant with a lower, irregular growth and a strong, resinous scent: the dwarf pine, one of the characteristic species of the Dolomite landscape.
The dwarf pine, scientifically known as Pinus mugo or Pinus montana, has a long tradition in this region. The essential oils extracted from its young branches are known for their beneficial effects on the body and overall well-being, particularly for their relaxing properties and fresh, balsamic aroma.

At Camping Sass Dlacia, the dwarf pine is the undisputed protagonist of one of our most popular dishes: our risotto scented with dwarf pine. The dish combines the delicate, fresh notes of a dwarf pine–infused butter with the creaminess of chanterelles and, in contrast, the crunchiness of pan-seared Tyrolean speck.
